Our first offering is the Liège waffle, originating from the city of Liège in eastern Belgium. These waffles are immensely popular throughout all of Europe. Small vendors can be found populating the pedestrian streets of many European cities. In keeping with tradition, this authentic waffle is prepared in a specialized cast iron press.

In the 18th century, the Prince-Bishop of Liège asked his cook to satisfy his sweet tooth by making a pastry with little pieces of sugar inside. The cook adapted a brioche recipe, added some specialty sugar at the last minute, and then cooked the sweet dough in a cast iron waffle maker. The prince was charmed by the vanilla aroma and delighted by the new recipe. The Liège waffle quickly became a regional culinary tradition and seduced the entire kingdom of Belgium.

The dough of the Liège waffle is sweeter and denser than "Belgian waffles" as we know them in the U.S. This waffle has a rich vanilla flavor and cooks up with a caramelized sugar coating on the outside, giving it a delightful sweetness. In Europe, this waffle is one of few products prepared to be eaten "on the go". It is typically served in a paper wrapping and eaten with the hands…no plate or fork required.

The Liège waffle can also be enjoyed complemented by toppings, if you choose. Many of our customers enjoy whipped cream, chocolate, Madison's homemade Gelato, as well as a variety of fruits.

Delicious, popular and portable… The Liège waffle is a sweet snack that can be enjoyed any time of day or night. The original taste and texture of the cast iron press can be easily refreshed by heating the waffle in the comfort of your home. Simply pop it in a convection oven or toast it like a bagel. It's a treat you're sure to enjoy time and time again.
